🥪 Vegan Tempeh BLT 🥪

If you had asked me any day this past month what I wanted to eat, the answer without a doubt would have been "a BLT Sandwich!"😆
There is something just so refreshing about a BLT sandwich. From the crisp lettuce 🥬, to the delicious bacon flavour 🥓, to the satisfying slices of bread (who doesn't love fresh bread?!) 🍞, to the juicy tomatoes 🍅, it is a real crowd pleaser!
Now, as much as I would love to have a BLT every day, I've come up with a pretty cool variation that is both simple to make, and a healthier alternative to the classic BLT sandwich.
This BLT-A includes smashed avocado 🥑, and uses Tempeh in place of your typical slices of bacon. Now, I know what you're thinking...Krystal, the bacon is what makes the BLT!! I hear you girl, and there is nothing wrong with a few slices of bacon on a sandwich now and again. But, you have to give this version a try, 'cause I promise you, once you try this tempeh bacon out, you might not want to go back!!

Ingredients:
For the Sandwich:
- 4 pieces of Sourdough Bread
- 2 Tomatoes, sliced
- 4 Lettuce Leaves
- 2 Avocados
- 1 Lime, juiced
- Sriracha to taste
- Avocado Oil (to coat bottom of pan)
- 1, 8 oz Package of Tempeh, unflavored
For the Tempeh + Marinade:
- ¼ Cup of Tamari
- ⅛ Cup of Bragg's Apple Cider Vinegar
- 1 Tsp of Liquid Smoke
- 1 ½ Tbsp Lakanto Maple Syrup
- ½ Tsp Cumin
- ½ Tsp Garlic Powder
- ¼ Tsp Paprika
Directions:
Cut tempeh in ¼ inch pieces lengthwise.
Put marinade ingredients in a large plastic bag with tempeh and marinate for at least 4 hours or overnight.
To cook, heat a pan on medium high heat with avocado oil and fry the tempeh so it browns on each side and cooked through. About 4 min per side. Once done set aside.
Place the inside of the avocado into a bowl along with the lime juice and sriracha to taste. Mash with a fork until it resembles guacamole.
Toast bread if desired and assemble the sandwich by spreading avocado on one slice of bread followed by the tempeh bacon, tomato, lettuce and 2nd slice of bread.
Optional toppings could include: Red Onions, Buffalo Sauce, Bitchin' Sauce (one of my favorites) or Dijon Mustard!

Extra tips:
If you want to make this even more simple to make, you can buy some pre-flavoured tempeh, just be careful on the ingredients to make sure it's not too high in sodium! I suggest the Lightlife Smoky Tempeh Strips!
