🎄 Peppermint Collagen Christmas Truffles! 🎄

Check out these Peppermint Collagen Christmas Truffles featuring one of my favorite protein powder flavours...the Garden of Life Chocolate Collagen Protein!

These truffles are fun to make with the whole family and are so delicious!

Ingredients
For the truffles:

  • 1 cup hazelnuts
  • 1/2 cup pistachios + 1/4 cup for rolling in
  • 2 tbsp coconut milk or coconut cream
  • 2 tbsp coconut oil
  • 1 scoop Garden of Life Chocolate Collagen Protein Powder
  • 1 tbsp Lakanto Sweetener (classic)
  • 1 tsp peppermint extract 
  • 1/4 cup almond milk (add after)

For the chocolate coating:

  • 1/2 cup Lakanto Sugar Free Chocolate Chips or Lily’s
  •  chocolate chips
  • 2 tbsp coconut oil

For rolling:

  • 1/4 cup pistachios, chopped fine 
  • 1/2 cup Lakanto Sweetener (golden)
  • 1/2 cup Cacao powder 

Directions: 

Place all truffle ingredients in a food processor and blend until smooth. After blending a minute, stir carefully with a butter knife and add 1/4 cup almond milk and process again. 

You may need to stir and process a handful of times to get a gooey consistency. Place mixture into a bowl and place in freezer for one hour or until firm enough to roll.

While waiting, separate rolling ingredients into three small bowls. 

Remove truffle mixture from freezer and roll into a little bigger than tsp. size balls. Heat coconut oil until melted. Then heat chocolate chips in 30 second increments until melted. Add melted coconut oil to the chocolate and stir well. Dip each ball into the chocolate and into chopped pistachio, Lakanto sweetener or cacao and set on wax paper. Enjoy! 

You can store these in a covered container in the fridge for 2 weeks or in the freezer for 2-3 months.
