🎁 Creamy Fennel Christmas Soup 🎁
Who doesn't love Christmas cookies, tarts, candies, and all the sweet treats you love baking over the holiday season? I always encourage treats in moderation, because healthy should be a lifestyle that is simple and easy to maintain, and that absolutely includes eating those goodies and not feeling guilty about it!
But, if you want to give your digestive system a break afterwards, you can with this simple and delicious soup! This soup is super tasty and great for digestion especially during the holidays when you may feel like you need a detox. This makes it the perfect soup to help digest any heavier foods you may eat over the holidays, like Grandma's Christmas baking!!
Fennel is a super delicious, fiber packed vegetable that supports detoxifying the body, helps reduce inflammation, lower blood pressure, aids in digestion and helps balance hormone levels.
I made this soup using the bulb and the most of the stalks as to not waste anything but you could just use the bulb if you prefer!
Ingredients:
- 2 Cups Fennel Bulb and Stalks, chopped
- 1 Cup Cauliflower Rice, fresh of frozen
- 1 1/4 Cup Roasted Butternut Squash (I used pre-cut butternut
- squash and just steamed in the microwave, but you can do from frozen pre-cut as well)
- 1/2 Cup Apple, peeled & chopped
- 1 Tbsp Fresh Sage Leaves, chopped
- 10 Cashews (approx. 2 tbsp)
- 2 Tbsp Hemp Seeds
- 1 Cup Oat or Almond Milk
- 1 Cup Vegetable Stock
- 1/2 Tsp Himalayan Salt
- 1/4 Tsp Pepper
- 1 Tbsp Garden of Life Turmeric Boost
For Toppings:
- Fennel Fronds
- Crushed Pistachios
- Balsamic drizzle
- Pomegranate Perils
Directions:
Sauté fennel with broth until tender, about 15 minutes. In a separate pan on low to low/medium heat, add the slightest amount of olive oil and sauté the sage until just lightly browned. They can overlook quickly so watch closely, it won’t take long.
Add the sage and all other ingredients to the pot. Summer for about 15-20 minutes until apples are cooked and soft. Place all ingredients into a blender and fully purée until smooth.
Taste test and add more salt or other desired seasonings. Add more milk or water if you like a thinner consistency. Top with crushed pistachios, fennel fronds, balsamic drizzle and/or pomegranate seeds.
